Our absolute favorite breakfast spot was located right across from Doug’s apartment. We actually regret we didn’t take more advantage of the proximity because it is THE BEST breakfast around. It’s a charming location in Uptown that was once an old laundry mat. It is always crowded, for good reason, and has one of the most amazing servers we’ve ever met….

Though it may not show in most of my recipes, brunch is my absolute favorite meal. Lazy Saturday mornings when I roll out of bed and am no rush to get anywhere. Ok, to be honest, no one “rolls out of bed” with a 3 year old, but the not having to rush anywhere part is mostly true too. I get to take my time to prepare a delicious brunch for my family. The Best Breakfast Casserole
We’ve had guests and lots of events lately, so I’ve made meals that are crowd pleasing but easy. I honestly can’t quite remember where I got the initial recipe for this, but it was a couple years ago I think. This breakfast casserole is so simple, fast and cheap when it comes to feeding a large amount of people. It has become my go to casserole when it comes to any gathering where there will be breakfast. I highly recommend adding it to your arsenal as well! I really wanted to get this posted before the Easter weekend because I know several of you will have family in for the weekend and hungry little mouths to feed….
Low Carb Eggs In A Nest
Monday we had an “ice day”, which I know most northerners probably find completely ridiculous. It’s seriously sketchy driving on roads that are completely iced over. This might look like pretty snow, but I assure you all I was doing was slipping and sliding. I couldn’t even park all the way up in my in-laws drive way I was sliding so much. Skinny Crustless Quiche
One of the biggest notable things that has changed about my cooking is probably that it is a lot more health conscious. While I still love a good cookie dough cupcake every now and then, my meals are a lot more calorie-centric. Baby weight was not kind to me and I definitely didn’t help myself in that department by baking every weekend….
