One of the things I look forward to the most during the winter season is a good cup of hot chocolate.  Kirkley is just getting to the age where she can enjoy it, and for some reason it is one of the most comforting things on a cold winters day.  To add onto the simple pleasure, getting one straight from Starbucks® makes it all that much better.  Fun fact….way back yonder (oh lets just say when I was in college, so last year right? cough cough) I used to work at Starbucks®.  It was SO much fun and really revved my addiction to it’s drinks.  The hot chocolate there is one of the richest and creamiest hot chocolate drinks around.

Thankfully, Starbucks has made having a Starbucks® Hot Cocoa right in the comfort of your own home or office, as easy as pushing a button.  I can now enjoy the Classic Hot Cocoa and Salted Caramel (I KNOW, RIGHT?!?!) flavors any time I want to.  Sadly, the nearest Starbucks® location is 30 minutes away from me.  The travesty.  One thing I do know is our local grocers (and yours) carry these fantastic little K-Cup pods for my Keurig machines at home and the office.  Hello convenience!

As you know, I’m a part of this wonderfully fun thing called the Secret Recipe Club.  It is SOOOOO much fun. I love searching other bloggers pages to see what fun recipes and ideas they have.  I was lucky enough this month to get Erin with The Spiffy Cookie.  I was really excited to get her because we’ve been a member of a lot of the same blogger groups for some time and I see a lot of her recipes here and there.  I also learned that she is originally a Texan, so I liked that about her! She has A LOT of amazing recipes hanging out on her page.  It was really really difficult to decide what to make.  I thought about doing something with yeast like these Pretzel Rolls, which sound amazing to go on a burger!  Maybe pair that with the Mango Lassi for dessert?  Yes, please!

The one I was drawn to the most was her breakfast portion.   I came across the Breakfast Grilled Cheese, which combines 2 of my favorite types of meals and BINGO! you guys, if you like breakfast and dinner combined, you NEED to check out the Breakfast at Tiffany’s Burger. Holy wow!  Anyways, I saw the idea and concept for The Breakfast Grilled Cheese and put my own spin on hers.  However, you may want to do what she did and put it on a bagel, yum!  This sandwich was fantastic, I had it for Brinner. :-)  I am going to definitely make my way through some more of her recipes as well soon!

Breakfast Grilled Cheese #SRC

Breakfast Grilled Cheese #SRC

Ingredients

  • 2 pieces of cooked bacon
  • 1 egg
  • 1 tablespoon milk
  • 1 wedge laughing cow cheese
  • 2 Tablespoons of salted butter
  • 2 slices of swiss cheese
  • 2 pieces of toast
  • sliced avocado
  • salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the egg, milk and laughing cow cheese.
  2. Heat a small skillet over medium heat and heat 1/2 tablespoon of butter.
  3. Pour egg in skillet and scramble. Slowly shape it in the form of a square or rough circle.
  4. Once egg is cooked through, remove to plate and wipe out skillet.
  5. Assemble sandwich on cutting board. Toast, 1 piece of swiss cheese, add egg patty, bacon, avocado and top with the remaining piece of swiss cheese. Top with other slice of toast.
  6. In the same small skillet, melt 1 tablespoon of butter and place sandwich in skillet. Allow to toast through then melt remaining butter and flip the sandwich (VERY carefully if you don't want a scrambled sandwich :-)).
  7. Once completely toasted on both sides, remove from skillet and serve.

If you keep up with my blog even slightly, you know I have a thing for salted caramel.  Shameful, but true.  We’re in a relationship.  It’s an addictive kind of relationship.  Something about the salty and sweet combination just gets me every time.  Around Christmas I seem to be driven to things that have the salty sweet combo…such as “Christmas Crack”.  That stuff is dangerous in my house, for me. :-).  When I heard it was time for the annual Great Food Blogger Cookie Swap, I knew what I had to do.  I wanted to share my love of salty and sweet with my recipients!  It was perfect because all 3 were nut allergies, and these cookies are completely nut free!

If you haven’t heard of the Great Food Blogger Cookie Swap then let me fill you in on it’s greatness.  It’s a HUGE cookie swap and hundreds of food bloggers participate.  You are assigned 3 other bloggers to send your favorite (or new) holiday cookies to! It’s so much fun to go to your mailbox and get cookies amidst all of the beautiful Christmas cards and influx of presents you bought online (ok let’s be real here, at that point I had hardly been doing any Christmas shopping…slacker!).   Let me just tell you in case you didn’t know, food bloggers can bake!

Aside from the cookies, the swap raises funds for the Childhood Cancer Foundation, which is near and dear to my heart!  It is called Cookies for Kids Cancer.  Please go check it out and if you feel  it in your heart to donate, please do!

These thumbprint cookies are really a lot of fun, and even your kids can help out with those tiny thumbs of theirs.  I am all about having fun in the kitchen with your family, especially around the holidays! Your base cookie is a delicious and soft butter cookie and it’s filled with gooey and decadent salted caramel.  Then to top it off you drizzle  dark chocolate on them.  These are a few of my favorite things!

Salted Caramel Thumbprints with Chocolate Drizzle

Ingredients

  • Cookies
  • ⅔ cup butter, softened
  • ½ cup sugar (extra for rolling cookies)
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 1½ cups all-purpose flour
  • Salted Caramel
  • ⅓ cup firmly packed brown sugar
  • ¼ cup salted butter
  • 2 tablespoons heavy whipping cream
  • Fleur De Sel or Sea Salt
  • Chocolate Drizzle:
  • 1/2 Cup Dark Chocolate Chips
  • 1/2 TBSP Crisco or Butter

Instructions

  1. In the bowl of a stand mixer with the paddle attached on medium speed mix together butter, sugar, eggs and vanilla for 3-5 minutes until light and fluffy. Add in the flour and mix on low speed until combined. Remove bowl from mixer and pour about 1/2 cup of sugar into a small bowl on the side. Prepare a cookie sheet with parchment paper. Using your hands, roll dough into 1.5 inch balls and roll in sugar. Place about 2 inches apart on cookies sheet and make an indentation in the middle of the cookie using your thumb. Refrigerate for at least an hour.
  2. Preheat the oven to 375. Remove cookies from refrigerator and place immediately into the oven. Bake cookies for 8-10 minutes. When you take the cookies out of the oven, you might need to press down slightly in the middle again to allow enough caramel to stay in the middle of the cookies. Place cookie sheet on cooling rack and allow to cool completely on cookie sheet.
  3. While cookies are cooling, make the caramel. Melt butter and brown sugar in a small saucepan over medium heat. Cook down completely while whisking constantly until it begins to bubble. Continue to whisk while mixture cooks for 1 minute. Remove saucepan from heat and slowly whisk in the whipping cream. Set aside and allow caramel to cool off for 15 minutes.
  4. Once caramel has cooled, using a spoon pour caramel sauce into middle of each cookie. Allow it to set for about 5 minutes.
  5. In a microwave safe bowl, heat chocolate and crisco for 30 seconds at a time, stirring after each 30 seconds until chocolate is smooth. Using a spoon, drizzle chocolate over tops of cookies, and finish off with sea salt or fluer de sel.
  6. Makes a dozen cookies

We made it through another Monday!  Who can believe there are only 16 days until Christmas? It is happening WAY too fast, but I’m thankful to have knocked out a lot of shopping this past weekend in Dallas.  Now I am going over in my head all the things I still need to get and having a mini panic attack! EEK!  Who is ready?  I know by now most of you probably have everything all wrapped and under the trees by now.  One thing I figured out is the earlier I start shopping the more I end up spending!  It’s better for me to procrastinate :-).  Good luck to you all as we draw closer!

I am always looking for quick and easy bars, brownies and cookies this time of year.  They are perfect for pot lucks, holiday parties or even treat tins for the holidays.  That’s what my goal was to find for this Secret Recipe Club assignment.  I was assigned to Wendy’s blog – A Day in the Life on the Farm.  Both her and her husband are retired police officers who decided to move to the country after retirement. She has some fantastic recipes to choose from! I chose the Gooey Butter Shortbread Bars!

I’ve always been a big shortbread fan, but love the idea of these gooey bars.  There is a shortbread crust filled with a sweet and gooey center filling.  I topped it off with some large sugar crystals to add some texture to the recipe. These were quick, easy and tasty!! Enjoy!

Gooey Shortbread Bars – SRC

Ingredients

  • For the Crust:
  • 1 cup flour
  • 1/2 cup unsalted butter, softened
  • 1/3 c.up powdered sugar
  • For the Topping:
  • 2 TBSP light corn syrup
  • 1 TBSP water
  • 1 tsp vanilla
  • 6 TBSP unsalted butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 cup. + 2 TBSP flour
  • Coarse granulated sugar

Instructions

  1. Pre-heat your oven to 350. Line an 8 inch square baking dish with foil and spray with cooking spray.
  2. Combine the ingredients for the crust : butter, powdered sugar and flour, in the bowl of a stand mixer and mix on medium speed just until the mixture resembles crumb.
  3. Bake for 15 minutes. Remove from oven and let cool for 10 minutes.
  4. Combine syrup, water and vanilla in a small bowl. Mix well and set aside.
  5. Place remaining butter and granulated sugar in the mixing bowl and beat until light and fluffy. Add egg and mix until just combined. Then alternate flour and syrup mixture adding into the mixing bowl, blending after each addition. Spread with a rubber spatula over the cooled crust. Bake for 25-30 minutes or until golden. Sprinkle with coarse granulated decorating sugar and bake for another 2 min to set.
  6. Remove from oven and lift foil out of the pan. Let cool completely before cutting into bars.

Holidays are always the best time to reflect upon your life and the people who surround you.  There are those you get to see every day, those you see often and then those who you know are still there for you and a part of your life though you don’t get to say it often.  This holiday season my goal is to say more to the people who are important to me.  Thanks to the new KISSES Deluxe from Hersey’s I can.

 

Things are so different than they were when I was younger.  Technology has drastically changed how we communicate and sadly the frequency has changed.  Now that we have social media as a quick and easy way to keep up with your family and friends

 , the sad truth is you lose touch with several of them.  With busy lives, it’s the easiest way to let everyone know what you’re up to and how your kids are doing.  I admit, it is too easy.  I rely on it entirely too much.  Life is busy for everyone, and that’s just the truth.
Technology does make it easier to stay in touch through text or video chat, but the sincerity that goes with those things are lacking.  This holiday season I want to make sure those near and far really know what they mean to me.  I am thankful for my amazing family near and far, and friends who have weathered the storms through the years.  I am thankful for those that I can just pick right back up where we left off even though it may have been a while since we’ve spoken.   I know they’re all there for me and I want to make sure they all know that I am still there for them.  There are so many people that are important to me in my life!
