I have a confession, though it’s probably pretty apparent. I can no longer make cookies without browning butter and topping with flaky sea salt. It’s a serious addiction as you can tell from these, these and these. I sometimes fear that y’all might get tired of it, but I firmly believe doing these two things takes them to a whole other level of awesomeness. The browned butter adds a beautiful nutty flavor with a hint of salty and helps add some dark color to the cookie. Using melted butter to begin with makes the cookie more chewy, which I personally prefer. I also feel that adding flaky sea salt to the top makes the sweetness of the chocolate pop. Whew what a week it’s been! Holidays and I started doing a little portrait photography on the side. I’ve made myself entirely too busy again. Oh well, it’s fun! I promise some new recipes in the next couple weeks! I’ve got some good ones coming.

Gevalia Iced Coffee with Almond Milk

I. Love. Coffee. I mean, I guess who doesn’t, but I really love it for the taste. I am not a 3 cups a day kind of gal most days, but I have to have my morning coffee. Some days it’s even an afternoon pick me up or a post dinner drink. I absolutely love it. I also have a beautiful red espresso maker at home that I get to use about 2 times a week. With trying to drag myself out of bed, get myself and my 3 year old ready and still make it to work in time, I don’t have time to spend with that beautiful red espresso maker. So I make due at work with what I have in my office and add my almond milk creamer to it off my day goes. I can’t have much dairy and I cannot drink soy milk because of my thyroid, I much prefer almond milk….

Cucumber Sandwiches with Hummus Turkey and Cilantro
Even though I’m not a teacher, I’m still a huge fan of summertime. We LOVE being around water. Of course when you live in Texas and temperatures are 100+ everyday who wouldn’t be around the water as much as possible? (I really shouldn’t complain, so far we’ve had a super mild summer!). Be it pool, lake or state park we always stock up on snacks. Everything seems to taste a thousand times better when you’ve been lounging by water all day. This year I’m going to try to keep more healthy options on hand for when we get “snacky”. Complete side note those with kids will appreciate. My 3 year old daughter will not eat anything you call a meal, breakfast lunch or dinner. She will only eat it if you call it a “snack”. Oh and if you do call it anything other than that she will be quick to correct you. Kids are funny….

Gluten Free Black Bean Goat Cheese and Caramelized Onion Empanadas #PANFAN

I have been trying to be more creative and adventurous in the kitchen lately. Go a bit outside my normal comfort zone, and I really highly encourage you to do the same. The feeling of accomplishment when something I’ve been wanting to make goes swimmingly is absolutely wonderful. While Cornmeal is ALWAYS a staple in my pantry, I wanted to try something outside my norm with it. It has such versatility in the kitchen and in southern dishes particularly, If it’s not in my pantry, something is wrong. I was feeling adventurous this week though and went pretty far “south” for my culinary exploration. P.A.N. cornmeal is the number one cornmeal used in most homes in South America. It is now breaking into the American market thankfully! Corn is native to the Americas, but due to its rich nutrients and versatility, cornmeal is a staple all over the world. One of the other GREAT things about P.A.N. is, its gluten free. That just makes it all the better for me to cook with since I’m already trying to cut gluten. I’ve already used it in several of my dishes (more of which I plan to share with you soon)!…
