I’m so sorry..I told you this whole blogging thing might get rocky and sporadic. But don’t worry, I am going to make it up to you, all 3 of my subscribers . Today I am going to bring you 2 posts with recipes. OK I hope today, regardless I have 2 recipes worth of pictures on my camera, its a matter of uploading and editing them. For starters, I bring you these amazingly easy and DELICIOUS enchiladas, so good, I am thinking about making them again this week! As most of you know, I grew up super close to San Antonio…so I could eat Mexican food almost every meal. Funny story, when Doug first came to visit Bandera and stay at my parents, he couldn’t get over how many days in a row we eat breakfast tacos and mexican food all together. I remember by the end of the trip, all he really wanted was a biscuit. So needless to say, we love us some Mexican food, just like East Texans love BBQ!
I wish I could remember how I came across this recipe, but I do remember it was on someone’s blog. They truly are so good, you will be shocked at how easy they are. I took this recipe from this site and tweaked it some, adding some garlic flavor and of course mushrooms. (I could also eat mushrooms in/with just about anything). And on a side note, I really do wish I could say these were healthy and good for you, but they’re not. At all, well, I did lighten it up slightly by using light Cream Cheese, but thats where it ends. The heavy cream, cheese and flour tortillas will do you in, but it is so worth it. Really one of these bad boys will fill you up, but they are so good and hard to eat just one.
