I’m so sorry..I told you this whole blogging thing might get rocky and sporadic. But don’t worry, I am going to make it up to you, all 3 of my subscribers . Today I am going to bring you 2 posts with recipes. OK I hope today, regardless I have 2 recipes worth of pictures on my camera, its a matter of uploading and editing them. For starters, I bring you these amazingly easy and DELICIOUS enchiladas, so good, I am thinking about making them again this week! As most of you know, I grew up super close to San Antonio…so I could eat Mexican food almost every meal. Funny story, when Doug first came to visit Bandera and stay at my parents, he couldn’t get over how many days in a row we eat breakfast tacos and mexican food all together. I remember by the end of the trip, all he really wanted was a biscuit. So needless to say, we love us some Mexican food, just like East Texans love BBQ!
I wish I could remember how I came across this recipe, but I do remember it was on someone’s blog. They truly are so good, you will be shocked at how easy they are. I took this recipe from this site and tweaked it some, adding some garlic flavor and of course mushrooms. (I could also eat mushrooms in/with just about anything). And on a side note, I really do wish I could say these were healthy and good for you, but they’re not. At all, well, I did lighten it up slightly by using light Cream Cheese, but thats where it ends. The heavy cream, cheese and flour tortillas will do you in, but it is so worth it. Really one of these bad boys will fill you up, but they are so good and hard to eat just one. Make sure you read on after the recipe…I have some information you might be interested in!

Serve it up with some rice and beans (not homemade…sorry!!) and happy husband!

Cheesy Creamy Chicken Enchiladas
Ingredients:
1 tbsp butter or margarine
1 can Rotel tomatoes and green chilies, drained
5 sliced white mushrooms
1 (8 oz) pkg light cream cheese, cut up and softened
2 cups chopped, cooked chicken breast
1-2 Cloves of Garlic (depending on if you like Garlic..)
8 (8″) flour tortillas
2 cups shredded Monterey Jack cheese
1 pint whipping cream
Directions:
Before I heat up the oven, I diced my chicken and cooked it in a pan with some olive oil and minced garlic. Let the oil heat up, then add the garlic till it is brown, adding the Chicken last until it is cooked completely.
Preheat oven to 350. Spray 9×13 baking dish with cooking spray. Melt butter in large skillet over medium heat. Add mushrooms for 2 minutes then add rotel and saute 1 min. Stir in cream cheese and chicken and cook, stirring constantly until cream cheese melts. Sprinkle a little bit of cheese on tortilla, then spoon 2-3 tablespoons of chicken mixture down center of each tortilla. Roll up tortillas and place seam side down in a lightly greased 9×13 baking dish.
Sprinkle with Monterey Jack cheese, and drizzle with whipping cream. (I personally did not use the whole pint because I was worried of making it soggy, but it wasn’t at all)!
Cover with foil and bake at 350 degrees for 30 min. Take off foil and cook for another 15 mins, or until top is golden brown. ENJOY!
CHEESE- There is a sequel to this post, and if you couldn’t tell…I love Cheese in addition to Mexican food, and sweets…and too many other indulgences. So when I came across this wonderful cheese shop that is in NYC, that mails you cheese, overnight…I was very happy. It’s called Murrays (http://www.murrayscheese.com/ ) and they have every cheese you could ever think of! And me personally, I love soft creamy buttery cheese, that is sweet…not too salty and spreads like butter! In case you are curious on that cheese particular, it is called Fromager D’Affinois . The cheese is overnighted and comes in a box that looks like-

Then inside it is wrapped up-(I know there are 2 cheeses there, but I didn’t like the other one. If you call Murrays and get the cheese counter, you will get a very nice and pushy New Yorker who will help you choose what you are looking for! But the other one she suggested just wasn’t my cup of tea)
And finally when you get it all out, and it is stinking up your whole house it looks like…and tastes delicious!

Um, can I just say how excited I am that you posted that cheese website! I found one that I’ve looked for EVERYWHERE that I’ve only found at the wine bar in Bandera! Yay!!! So excited. Going to have to order it for sure! Love it!
