I mentioned last week sometime that I would have a guest blogger before Easter. My Aunt Jan typically makes fun Easter treats every year, and I saw a particularly fun one on her facebook not long ago. Easter is always such a wonderful time of the year in general. The holiday itself represents so many things, overall, a new beginning. If there were ever a time to start fresh, now would be the it. Spring has sprung, the weather is perfect (for now…in Texas), and if you are a Texan, you know these perfect temps won’t last too long until the heat sets in. Of course, I am one of those Texans that LOVE the heat. I grew up outdoors, on the lake, fishing, camping…you name it. So for me, heat means fun on the water, outdoor BBQs, catching some sun…ahhh…..sorry, got a little side tracked there. Back to the present, and Easter and spring! …
Every year Dougs cousin, Amy, her daughters school does a fundraiser where they sell flats of strawberries. These strawberries come from southern Louisiana, and there are a TON of them. I seriously had no idea what I was in for. In the past week I have made homemade strawberry ice cream, and 5…yes 5 strawberry cobblers that I shared with many. And I STILL have pints left, so I plan on trying jam…which could be a huge failure, but I am still going to try….
Another birthday has come and gone, and it was another great one! I am so thankful to have such wonderful family and friends! (Even though I do wish we were closer to my parents and sister, but glad I got to see them a couple weeks ago!) I am finally starting to make some really great friends here in town and we had a great dinner and night out. …
A fun thing about having a baking blog is people come up with ideas and want you to make it for you. One bad thing about having a baking blog..is people come up with ideas and want you to make it for them. Now don’t take this the way it sounds…by this I mean I am always my own worst critic. And for some reason it frightens me whenever other people in mass quantities taste my food. I worry people are going to say it tastes great to me…and then spit it out when they turn around! I know…I know!

Its Strawberry season! Or at least I thought it was until I went to the store and there wasn’t but a few cases…but then again, Marshall isn’t known for its vast food selection. But when I was asking Doug for any requests on the next blog addition…he said strawberry shortcake. So of course I wanted to make something a little more appealing than the regular strawberry Shortcake. I searched and searched for an appealing angel food recipe and came across this one here. I tweaked it a little of course..(not much) and then added the strawberries and the whipped cream frosting from a tuxedo cake from the Pastry Queen. …
