Doug and I have been on a pretty good health kick. Smoothies for breakfast, salad or something light for lunch and a light dinner. We had a month or so in there where we just had heavy food night after night and it was taking its toll. I came home the other night smoothied out and was craving avocados and something with cilantro. I had been meaning to concoct something like this for some time now. Turned out to make the perfect light dinner for us. We actually just ate it with chips right out of the bowl. However, this could make a great dip, or even side dish with any dish. Doug actually suggested I call it “turbo charged guacamole” I felt a little funny doing that because this is more like a salad. Hence, Black Bean Avocado Salad felt more appropriate. Actually my co-worker told me the other day I prefer guacamole salad because of everything I add to it. I like it with texture! This salad certainly has texture. Enjoy!
- 2 ripe avocados (diced)
- 1 Whole Lime
- 1 medium tomato (diced)
- ⅓ cup rinsed black beans
- ¼ cup chopped yellow onion
- ¼ cup chopped cilantro
- ⅓ cup crumbled queso fresco
- ¼ tsp white pepper
- ¼ - ½ tsp garlic salt
- Add avocados to a bowl. Squeeze juice of half of a lime over and very gently stir.
- Add in tomato, black beans, onion, cilantro, pepper, salt and ¼ cup of the queso fresco. Stir very carefully not to mash up the avocados and leave them chunky.
- Sprinkle remaining queso fresco on top.
- Serve immediately.

Loving the turbo charged name too! I think you can get away with calling this dip anything though bc it is that pleasing to the eye!!!

I love all the flavors in this! I’d probably serve it as a dip, but then, I’m a sucker for snacky dipping foods. We’ve actually got a little casual get together on Friday – I think this recipe would be perfect for it!

Could you substitute the lime for possibly a drop or two of YL essential oils Lime?!
I don’t see why not! I would probably do just one though since EOs are so concentrated. It should also help prevent the avocados from browning too soon. Start with one drop and if it’s not enough for you add another. Let me know how it turns out!
