For some odd reason, I haven’t had the urge to bake much lately..just cook. Maybe it’s cause our kitchen has been a little unruly lately. My dishwasher…aka my husband, has fallen terribly behind on his job. We have an unspoken pact that I cook/bake, and he cleans up after me. Only fair, right?
Okay, so maybe its not unspoken…maybe he complains about it some….maybe he tells me “lets eat something easy tonight” to avoid cleaning up after my kitchen adventures.
Regardless of our household cleaning duties that I am sure you care nothing about….I have intentions of making something sweet soon. Something chocolaty possibly. We actually have a weekend at home this weekend, maybe even tonight.
In the meantime, I am sharing a super delicious and easy taco salad recipe. When you first look at it, or read the recipe…you might have an initial “EWWW” reaction at the random concoction of ingredients. I assure you, if you have not heard of this salad, just give it a shot. You will thank me. I first got the recipe from an old co-workers wife, and am so thankful for it!
I mean come on, you can’t go wrong with any salad that includes nacho cheese doritos, right?
Oh, and I am also considering starting a “wordless wednesday” post, like many of my fellow bloggers do. It will be comprised of pictures from the week I’ve found necessary to share with you. Probably comprised iphone instagram photos, with no words…if you haven’t caught that by “wordless wednesday”, then I’m a little worried about you. Just wanted to give you the heads up now, so you aren’t thrown off guard by a bunch of random pictures next Wednesday. (Not going to lie, it’s going to be incredibly hard for me not to explain the pictures to you.) Here’s a teaser, since today is Wednesday:

___________________________________________________________________________ Dorito Taco Salad
Taco Salad Printable Recipe
Ingredients:
1 lb of ground beef
1 Packet of taco seasoning
¾ cup water
1 can of dark red kidney beans, drained
1 head of lettuce
1 whole tomato, diced
½ cup shredded cheese (I use a Mexican blend)
Catalina Dressing (I use fat free)
½ bag crushed Dorito’s (Nacho flavor)
Directions:
In a pan on the stovetop, brown the ground beef. Once it has been browned, drain the excess juice from the pan. Add the packet of taco seasoning, water and can of drained dark red kidney beans and stir. Allow to simmer on low-med heat uncovered until the juice has cooked down.
Once the meat mixture is done, take off the burner and set to the side to cool while you prepare the salad.
Wash and chop the head of lettuce and place in a large bowl. Add in the diced tomatoes and shredded cheese. Add the meat mixture and the Catalina dressing and toss until well mixed. I always add in the Dorito’s last, so that the dressing doesn’t make them soggy. Feel free to adjust the amount of Dorito’s (or any ingredient for that matter) to your liking.
