Happy Memorial Day everyone! I first have to start by saying a great big THANK YOU to the men and women who serve our country and sacrifice so much to keep us safe! Today is all about you!
On our day off, we decided to skip out on the lake for the third day in a row. Giving wrinkles less of a chance of forming on my face, and really just had not done ANYTHING around the house all weekend and it was starting to get a little messy. Plus we didn’t want to be dog tired when we returned to work tomorrow.
Not only does Memorial Day have such a great importance to remember those men and women who serve. To me, it also represents the beginning of summer. What else represents summer like mojitos? Remember that fresh mint in our garden? I put it to good use today and made a pomegranate mojito.
We were also craving some burgers. Not just any burger, but one that we bought from a meat market in Conroe, TX. We’ve recreated it to make at any time here at the house. (No- Doug did not intentionally try and color coordinate with the burger patties).
I came up with an idea and we should all immediately put letters in the mail to our congressmen today. One week of summer vacation for adults every year. All businesses shut down for one week during the summer and we can enjoy summer vacation like we did when we were young. Sounds good, huh?
Back to the burgers….these puppies don’t need many toppings really. They are quite amazing just on their own. Really amazing. Yum.
Again, don’t forget the mojitos. (It makes me laugh that spell check tries to turn “mojitos” into midgets, glad I didn’t click accept or there would have been a lot of confusion if it would have said “don’t forget the midgets”.)

Printable Recipe -Mojitos
Pomegranate Mojitos
Ingredients:
10-12 Fresh Mint Leaves
1/2 Lime cut in 4 wedges
1 Package of Splenda
1 ½ ounces of Bacardi Silver Rum
¾ Cup Club Soda
2 Tablespoons of Pomegranate Juice
Ice
Directions:
Place the mint leaves and 1 of the lime wedges into a drinking glass. Using a muddler or the end of a wooden spoon, crush the mint leaves and lime wedges until mint leaves start to get soaked in lime juice. Add the packet of splenda, rum and one more lime wedge to the glass and crush until all of the lime juice is gone from the wedge. Fill the glass to almost the top with ice. Pour the Pomegranate juice and the club soda over the ice and stir. Add additional club soda or splenda to the glass if desired.

Bacon and Cheddar Burgers
Ingredients:
1 lb of Lean Ground Beef
6 Slices of Bacon
¾ Cup Shredded Cheddar Cheese
Dash of Liquid Smoke
A few dashes of Season It-All
4 Hamburger buns
Directions:
Cook bacon on a skillet or in microwave until desired crispness. Crumble or chop bacon into small pieces. Place 1 lb of ground beef in a large bowl and add bacon, cheese, season it-all and liquid smoke. Combine with hands until all ingredients are well combined. Divide meat mixture into 4 even patties. Cook on grill or on the stove until desired doneness of burger.
Remove from heat, place on bun and top with toppings or enjoy plain.
