Happy Memorial Day everyone! I first have to start by saying a great big THANK YOU to the men and women who serve our country and sacrifice so much to keep us safe! Today is all about you!
On our day off, we decided to skip out on the lake for the third day in a row. Giving wrinkles less of a chance of forming on my face, and really just had not done ANYTHING around the house all weekend and it was starting to get a little messy. Plus we didn’t want to be dog tired when we returned to work tomorrow.
Not only does Memorial Day have such a great importance to remember those men and women who serve. To me, it also represents the beginning of summer. What else represents summer like mojitos? Remember that fresh mint in our garden? I put it to good use today and made a pomegranate mojito.

Weekend Wonders
Another busy week…another week I have not had the energy to step foot in the kitchen.

It’s Monday.
That’s all I can really say about that. Super tired. (Okay, I guess that’s not all I can say about that).
Mondays jolt me into the week way too fast for my liking. I go from sleeping in until 9 to dragging my butt out of bed at 5:45 to rush to spin class. Which I really needed to go to after this delicious treat I made over the weekend.

Craving for Chocolate
I am not good at being sick. I whine. A lot…..A lot. And I am a slight hypochondriac. I think I am knocking at deaths door with the slightest sneeze. It is such a travesty too. When you get home from work with your whole weekend ahead of you on Friday afternoon, and you start to feel it. All weekend I was sick, still am. I would whine about allergies, but I don’t have your typical “allergies”. I have what is called “non-allergic rhinitis“, which if you don’t want to click on the link…basically I have a sensitive nose. Anything can set off my “allergies”, perfume, a certain fruit, dust…and I never know when it will hit me. Not fun, but such is life…right?…
All In The Family – Red Earth Cake
I have been excited for the chance to post something that is a family recipe for a while. I have been digging for some of my Nanny’s (my moms mom) recipes for a while now. Still the only one I have of hers is her peanut brittle, and for some silly reason I have the desire to keep that one sacred. So when my Mother in-law, Isabel (it truly is still weird for me to say “Isabel” and not “Mrs. Lewis”. It is so hard for me to call them by their first names, I feel like my Mom is going to get after me any minute…anyone else like that? For the purpose of this post, I will do it though ) asked me to make the families Red Earth Cake for my father in-law, Steve’s, surprise birthday dinner, I jumped at the chance. Then, I got nervous. Making a family recipe that is passed down is really a scary thing. What if it doesn’t live up to my predecessors renditions? What if I do something a little different and no one likes it?

Cinco De Mayo & Tres Leches Cake
I had good intentions of having this post up over the weekend…I really did. But after I made my previous post while sitting in the passenger seat during our long trek to my parents…the car sickness was enough to deter me from trying that again on the way back. I wish I weren’t one of those people who get motion sickness. I am not a good passenger, and unfortunately, I cannot sleep in the car very easily either, otherwise that would be nice to keep me occupied. What’s that you ask? Why don’t you drive? Well, you see…I am not a fan of driving for long periods of time either. Most trips down to visit my parents, I do take the wheel half way. This time we were hauling a trailer there and a hot tub on the trailer back, and that I don’t do.
