Even though I’m not a teacher, I’m still a huge fan of summertime. We LOVE being around water. Of course when you live in Texas and temperatures are 100+ everyday who wouldn’t be around the water as much as possible? (I really shouldn’t complain, so far we’ve had a super mild summer!). Be it pool, lake or state park we always stock up on snacks. Everything seems to taste a thousand times better when you’ve been lounging by water all day. This year I’m going to try to keep more healthy options on hand for when we get “snacky”. Complete side note those with kids will appreciate. My 3 year old daughter will not eat anything you call a meal, breakfast lunch or dinner. She will only eat it if you call it a “snack”. Oh and if you do call it anything other than that she will be quick to correct you. Kids are funny….

I have been trying to be more creative and adventurous in the kitchen lately. Go a bit outside my normal comfort zone, and I really highly encourage you to do the same. The feeling of accomplishment when something I’ve been wanting to make goes swimmingly is absolutely wonderful. While Cornmeal is ALWAYS a staple in my pantry, I wanted to try something outside my norm with it. It has such versatility in the kitchen and in southern dishes particularly, If it’s not in my pantry, something is wrong. I was feeling adventurous this week though and went pretty far “south” for my culinary exploration. P.A.N. cornmeal is the number one cornmeal used in most homes in South America. It is now breaking into the American market thankfully! Corn is native to the Americas, but due to its rich nutrients and versatility, cornmeal is a staple all over the world. One of the other GREAT things about P.A.N. is, its gluten free. That just makes it all the better for me to cook with since I’m already trying to cut gluten. It’s really hard to find decent seafood in the town I live in. Recently, our local grocery store started to remodel and up the inventory quality and quantity. They FINALLY got jumbo lump crab meat. Like, the real stuff not that orange stick stuff. I’ve been dying to try and recreate an appetizer from one of our favorite restaurants nearby and finally got the opportunity. I modified it a little bit and turned it into an actual salad, but I must say it turned out pretty darn good. Really, it’s pretty hard to go wrong with a combination of crab and avocado.
