Then she was 3 (Pic overload)
I asked Kirkley the other night t to stop growing so fast as we sat on the front porch rocking chairs of our new home. Her response was a sweet giggle and “I cannot do that, growing is too much fun.” Then I cried. I told her about how when she was a tiny baby I would sit in these very rocking chairs and sing to her while she slept. Then she proceeded to snuggle up to me and “sleep” while we sang Rock A Bye Baby and Twinkle Twinkle. I cried some more. I’m crying again as I recount that moment. I needed that moment. It made me realize how incredibly fast these little people grow. I know she’s only 3, but I swear to you last week she was only 3 months. And now I can’t stop crying.

Individual Triple Berry Trifles
These past few weekends have really helped me get a few new recipes in. I think I like to tell you all that we have company over when I post these because I don’t want you to think I eat this way all the time. Good news is, these triple berry trifles are at least a semi-healthy dessert. It’s light and refreshing and the operative word lately…easy. Great to have ready for the 4th of July too!

I’m going to very quickly step outside the recipes to wish my sweet husband a happy 5 year anniversary. I’m sure I’ll embarrass him by getting all mushy, but I figured I’d tell everyone a little about our story. You see, we’re both Aggies but we never met in college. We actually ran in the same group of friends, tailgated for football games RIGHT next to each other…I kid you not and we never met. We even interacted on facebook and an Aggie site, TexAgs, a couple of times talking about work and apartment recommendations, but never met. We met in 2008 at an Aggie function and I knew when I met him, as cheesy and cliche as it sounds, that he would be the man I would marry. The rest is history.
He is such an amazing husband, father, provider, comedian, athlete and so many other things. I cannot even begin to describe how blessed I feel to call him my husband. Happy 5 years! Now here are a bunch of pictures :-).
Crock Pot Red Beans and Rice
Where I grew up in South Texas, Cajun cooking was not easy to find. Now, Mexican Food and Tex-Mex, a completely different story. I grew up eating tacos for breakfast most days and miss the fact I can’t that here. Fast forward too many years to post and feel ok about it, and I’m 30 minutes from the Louisiana border. We get Cajun food here and there that’s ok, but we’re only a 5 hour drive from New Orleans. That’s real deal amazing food down there. *Side note, my absolute favorite place in NOLA is Mr. B’s. If you’re ever there, make sure to try the BBQ Shrimp or Shrimp and Grits. We may need a trip down there soon.

Creamy Rotel Corn Dip
Ok, so I’m sitting here trying to figure out how to talk about corn dip and all that keeps coming to my head is “I put my hand upon your hip…when I dip you dip we dip”. It won’t stop. Now you’re singing it too aren’t you? Sorry about that. It still won’t stop.
