Homemade oreos…yum.
I promised you two posts, and you shall receive two posts! This one is pretty short and sweet and yummy. I am a big oreo fan, and when I found these a while back I was super excited. They aren’t that difficult..but it does take a while to form the dough for each cookie. But again…so good.

Cheesy Creamy Chicken Enchiladas- AND CHEESE!!
I’m so sorry..I told you this whole blogging thing might get rocky and sporadic. But don’t worry, I am going to make it up to you, all 3 of my subscribers . Today I am going to bring you 2 posts with recipes. OK I hope today, regardless I have 2 recipes worth of pictures on my camera, its a matter of uploading and editing them. For starters, I bring you these amazingly easy and DELICIOUS enchiladas, so good, I am thinking about making them again this week! As most of you know, I grew up super close to San Antonio…so I could eat Mexican food almost every meal. Funny story, when Doug first came to visit Bandera and stay at my parents, he couldn’t get over how many days in a row we eat breakfast tacos and mexican food all together. I remember by the end of the trip, all he really wanted was a biscuit. So needless to say, we love us some Mexican food, just like East Texans love BBQ!
I wish I could remember how I came across this recipe, but I do remember it was on someone’s blog. They truly are so good, you will be shocked at how easy they are. I took this recipe from this site and tweaked it some, adding some garlic flavor and of course mushrooms. (I could also eat mushrooms in/with just about anything). And on a side note, I really do wish I could say these were healthy and good for you, but they’re not. At all, well, I did lighten it up slightly by using light Cream Cheese, but thats where it ends. The heavy cream, cheese and flour tortillas will do you in, but it is so worth it. Really one of these bad boys will fill you up, but they are so good and hard to eat just one. Make sure you read on after the recipe…I have some information you might be interested in!

Red Velvet Cheesecake for my Valentine!
Happy Valentine’s day to everyone! I am not going to lie, even though I am so lucky and blessed to have the most amazing Valentine ever (aka my husband)…I am not a big subscriber to Valentines Day in general. Not necessarily a cynic, just am one of those who consider it a “holiday” for the card company to make money. I was going to go into more detail on my thoughts on Valentines Day and if you are going to say I love you or send flowers, do it spontaneously (which Doug does!) However, I just got a sweet email from my Valentine and got a little mushy inside so I’ll just stop there because I guess I do give into it a little!!

Honey Glazed Sweet Skillet Cornbread
A staple in the south has always been cornbread, so naturally there are many variations. I, of course love good ol down home cornbread like Grandma makes. However, I’ve always liked it a little on the sweet side. When I stumbled upon this recipe for this sweet cornbread, I haven’t stopped making it (I really wish I could remember where I found the original one…but this one I’ve tweaked a little anyways). And when I say sweet…I mean sweet, like cake, it’s amazing. Put it under some chili and you’ve got you a meal!

So…Who is Caleigh???
I know some of you (if anyone actually reads this eventually) are wondering who the heck Caleigh is and where I got the name. Well, Caleigh is my border collie/Australian Shepherd mix “fur baby”. I have to warn you…this post maybe a long one, longer than you may want to read about a dog.

Okay Okay…I know there are a million and a half
baking/cooking blogs, and even some friends who have them. I am not starting
anything new here or trying to compete, but I have recently in the past year
realized my love for baking and cooking (baking more so than cooking). I spend
half my time in the kitchen on the weekends we are home, and a lot of time
searching food blogs and looking at wonderful ideas
on tastespotting.com or foodgawker.com. Truth is since I got my beautiful red
KitchenAid stand mixer for our wedding it has made spending time in the kitchen
much more enjoyable and easy!
I have attempted blogging before, it
didn’t go so well. I would lose interest after a few posts and it would go by
the wayside. Soooo, I figured why not give it one more shot, I always post
pictures of the food I make on facebook and always have people asking for the
recipes. This is just much easier to keep track of what I bake and let everyone
know how to make it too!
